Is the winch line supposed to spool itself evenly across the drum without bunching up? I used my xrc10 for the first time with the weight of the jeep on level ground. The line started to bunch up with no resistance, but when I put the parking brake on and provided more resistance it did not bunch up as much. So I put on leather gloves and guided the line myself. Am I doing something wrong?
Parking break on just enough to give some resistance is recommended.. you did the right thing

No winches do not self spool nicely, usually you have to get out and guide the line:beer:

Have someone be in the JK while you guide the line.

Something else I'll throw out there. Depending on what it is you're winching out of/off of it may be worthing thinking about popping the hood up and resting it against the windshield. It may seem pointless added protection if you're using a winch weight but a l'il extra added insurance never hurt anyone. Right?
Or drape something over the line so you can keep the hod down and see what's goiing on.

JohnSmack is correct. You will have to guide the line (wearing leather gloves ) if you want it to spool correctly.
