Got a great one.
I take 6 or so bucks and head down to costco and buy a bag, in fact, you get two bags. this is the best beef jerky I have tasted, especially at that price. :clap:

Tip number one replace beef with venison if possible. Using a low fat content meat or trimming all the fat out/off is key to having good jerky versus a soured mess down the road once you thought it was safe to keep it for a few weeks.

Tip number two marinade overnight. In addition I recomend you start with your favorite steak marinade and work from there. Sometimes with jerky I just salt, pepper, and garlic powder and others I go all out. The key here is match it up to your tastes.

Tip number three lay out your meat strips on a towel (I use a good bathroom type) and them using the same towel folded or another press down a bit to dry off all the liquid you can. This will hasten the drying and still once it has been marinaded overnight not reduce any flavour.

Tip number four lay out the meat on the tray in a single layer and do not allow the edges to touch. It is better to use another tray than overcrowd. Keep in mind airflow must go all around the meat in orfer to dry it evenly and fully.

Tip number five. If you would like a peppered (or any other spice) jerky in addition to the marinade sprinkle it on once the meat is laid out on the trays.

Tip number six (I should have put this number two) use a dehydrator with as low heat if possible. Some heat is needed to evaporate the water in the meat but too much starts the cooking process and there is nothing worse than burnt jerky.

I know you asked for a recipie but as I stated it should be to your tastes and not mine. I even vary mine depending on what I made last or what kind of mood I am in when I make it. The beauty of DIY jerky is not that it is cheaper or better (okay it's better) but rather that you can make it with your tastes in mind. If you want it hot and spicy, sweet and savory, or plain jane it is all up to you.

1 Cup Soy Sauce
1 Cup Worshtecherires.s.eajfdjopfsfop Sauce (you know what I mean:rotflmao2:)
1/2 Cup Ketchup
1 Tablespoon of liquid smoke
1 tablespoon of minced garlic
if you like it spicy
1/2 cup dried chilis

Good basic brine. You can obviously add or delete anything you want.

Oh and I am at work going from memory..if you are interested in it PM me, when I get home I can confirm if the amounts are right and whatnot.

Here is a recipe we have been using for several years.

This makes 5 to 6 pounds (raw) meat. We use bottom round or whatever is on sale, sliced thin.

1 Cup Worchester Sauce
1/2 Cup Soy Sauce
3/4 Cup Ketchup
2 Tablespoons Liquid Smoke
1 Tablespoon Garlic Powder
1 Tablespoon Onion Powder
1 Tablespoon Black Pepper
1/2 Lb. Brown Sugar

The drill is the usual, soak for a day or two in the fridge first. We dry on an American Harvest dehydrator.

Never had a bad batch. We bag and freeze the extra and pull it out to use as needed. Hope you like this.:)

Around here at the local Dollar General (and other cheap stuff stores) there is a marinade called Bullards. I have used it with great results as it has soy, worchester, garlic, etc already in it and costs like $1.00 a 16oz bottle. I also as mentioned before add other spices and seasonings (hot sauce, pepper, garlic, etc) to taste and as the mood strikes.

i used to make my own marinade until i found this stuff. Jerky Cure & Seasoning. the box i have is good for 15 pounds of meat. i like their Mandarin Teriyaki. it's made by Hi Mountain Jerky, located in Riverton, Wyoming. himtnjerky.com. I too like using Venison, healthier and safer. :thumbsup:

There is actually a really good brand that cabellas sells and thats what I use. It has all the seasoning and whatnots on it for a pretty fair price I think. About 4-5 different flavors and it tastes really good. I recommened it for sure.

Google Alton Brown Beef Jerkey. Best ever.

Also, don't use a dehydrator (AB tip). Buy yourself 3 furnace filters (cotton, not fiberglass), a box fan, and 2 bungee coards. Lay the beef strips in the furnace filters, bungee them to the fan and run it until they are dry. Takes about 4-5 days in Monterey, CA because it is crazy humid but I have been told it is a lot less time in the dry climates.

Bonus is that your house will smell like beef for a week!
