I'm seriously thinking about going if my wife can get out of school, I don't have a soft top, what do you guy do with your doors and top of you decide to take it off while Yal are there? Or will I just have to settle with just pulling off the freedom panels and leave the doors in the hotel room

If it's in your budget, just get a bikini top or find a cheap trektop for the elements on your drive.

We went to Jeep Beach this year had a great time.
will be going 2015.
Its fun to see to jeeps driving around town.
A free thing to do is drive the loop its a motorcycle thing but is a nice ride. (just look up Loop Daytona and get the map)
Food can be anywhere from cheap to $$$$$
they do have food at the track but a $$ and not that good.
And be sure to keep a check on the tides when driving on the beach
