Go with a 17" rim. Offset all depends on how far you want your tires sticking out using the stock fenders as reference point. You also have to consider how wide the tires are that you plan on using so you can avoid rubbing the inner sidewall. This is why you'll find many people running spacer/adapters on 17" stock rims with wider tires.

Just a heads up when using offset. How far in or out the rim sits will vary with the specific width of the rim. (ex. a -12 offset and 8" width is a 4.0" backspace, a -12 offset and 10" width is a 5.0" backspace. Same offset, an inch difference on the backspace...)
Converting offset to backspace is generally easier for most people. Stock rims are around 6" backspace, as that number goes down, the rims move out. So a 4.5" is about 1.5" further out than stock. (4.5" bs is the usual recommendation for 35x12.50 tires, though higher backspaces can work)

Not as much taller, it's wider that will rub as well. Sway bar links, control arms, etc. can be contact points.
Spacers create distance between the wheel and components, if rubbing occurs, or with a 315 or like size tire. With a 285 in Stock form, I can't see any reason why you couldn't run it as is.
Steering stop adjustment would really be the only "if" with stock wheels, and no bs increase to start.
As I stated above, in my other post, buy the tires, they will fit. Also, buy spacers just in case. Bases covered.
