Keep in mind that lookwise, a 33 inch with a 2 inch lift looks like a 35 with 3 inch plus lift. This is due to the shape of the fenders, that have a triangular opening. Therefore the higher the lift, the bigger the tire has to be to look balanced in the bigger opening.

Final question...The 17x8.5's come in -6 or 6 offset with 4.5in or 5in Backspacing respectively. Which will look better? I don't want to be tucked in under the fenders any more than I have to be.

To my eyes, they are by far the nicest wheels jeep ever offered. Can't understand why you would want to get rid of them, especially when your jeep and wheel color matches perfectly. That, and the fact that the ones you want to replace them with, are not even hub centric!!!! Nuff said about that, since you are older amd wiser.. Right
I have to admit that your lift is asking for at least a 34 inch tire. 285/75-17, that I would put on stock wheels with a 1 inch wheel spacer.
Here's my jeep with 1.5 inches front and 1 inch rear total lift ( that is taking in consideration that my 10A is lifted 1/2 inch from the factory) with 285/70 and the said 1 inch wheel spacer....
