Maybe they said "ute" as in the classification of vehicle, "utility"?
It's not a package, special edition, or any kind of model designation that I'm aware of.

I'm pretty sure that's a regular 'ole production Wrangler like the rest of them. That one is a 2-door, so UT wouldn't make sense as some esoteric abbreviation for "Unlimited" (4-door) either.
I did a quick google search. The standard vehicle description for a lot of Wranglers for sale (non-abbreviated) seems to be "Wrangler Utility" - which I've seen them post as before. Sometimes when the auto-post application for internet car sales ads creates the online advertisement, it will shorten the description or even pull that "utility" down into a trim designation and shorten it to 2 characters. There was no "UT" trim on the Wrangler available from Jeep or Chrysler...that I'm pretty sure of, as I've been following the line for quite some time now.
Here's an example where "UT" was pulled into the trim designation. Nothing special about this Jeep either, just another '07 Wrangler and nothing indicative about the VIN that would make it a special model.

I'm pretty sure it's the Utah edition
Ut is our abbreviation
It automatically drives like an a$$h&le for you it thinks that because it's four wheel drive that it can still do 80 in a whiteout it speeds up when people try to merge in your lane and does 50 in the left lane of I15 because it can
that's my theory anyway

For some reason, I think those sold really well in our state, too! Must have been a very popular model, apparently.
