Will try your suggestions this weekend, thanks!
Let us know how they turn out. By the way I keep the temp of the smoke box at 220 f. Where in Ontario are you?

I do a 3-2-1 on ribs, note its not electric but I imagine it would be the same, but they come out amazing. 3 hours smoke /charcoal, wrap in foil and cook another 2 hours (I put in half a coke, or Dr.Pepper in the foil with the ribs) then the last hour I take them out of the foil and let smoke for another hour. I also prep my ribs well them, soak in apple juice over night etc. I don't use a heavy smoke, apple wood is great.

I have a Traeger electric smoker. I can do so much with it. I will be smoking stuffed pork tenderloin wrapped in bacon for the games today.

Anyone here try the electric world of smoking?

You can set a thermostat and let it rip..

I know the purest may frown on it, but...
I have the masterbuilt 40" electric smoker. I have used it to smoke lots of different meats. Love it. They are sealed up really well so you don't have to add water constantly and your may well never dry out. It's the easiest smoker I've ever used.
