Have two 27w LED spot lights and I am not sure how to wire them

You need a relay. Buy a pre wired harness with a relay, saves some time and confusion. I have the kc one and the instructions are pretty good.

It really depends on the switch that you use. Since these are LEDs, they draw a low amount of current. 27W/12V=2.25Amps per light. So long as your switch is good for 4.5 amps plus 10%, you will be fine without a relay. There are plenty of switches out there that can handle that small amount of current.

Things change when you are running regular lights and multiples of them...lots more current there.

That is only about 7 amps. You could go without a relay, but you would need to fuse the + at the battery and run a switch that can handle the amperage (say one for 10 amps).
