I would press fit the screens in without a frame unless you have little kids who man-handle your headrests. Not a lot of hacking to do, although I'm not sure what material the headrests are filled with. If it's the same poly-foam fill my rear seat had you should just be able to hollow them out a little bit at a time until the screen seats snugly. I guess the safest bet would be to get a pair of junk-yard head rests to practice on.

Press fitting is done with an exacto knife/razor blade. Cut an X in the center of the head rest and gradually extend the legs of the X until it is ~1/4-1/2" away from the corners of the screen you are installing. Hollow out some of the headrest material only from the center, then outwards gradually. Push with firm pressure on the corners of the screen until it mounts snugly into the headrest. You will also need to drill some small holes from the bottom of the headrest into the cavity to route the wires out.
