New tires stock JK
I've got a JK sahara sitting at stock height, I just bought it and it needs new tires, looking for a more aggressive tire, something that can handle mud, will fit on my 18" wheel, but unsure what size to go. What have some of you guys been successful with and what haven't you been successful with?

You can go up to a 33" tire on stock suspension with adding wheel spacers. You may encounter some rubbing in the wheel well at full flex when off road though but you can add a small cool spacers and some longer bump stops to fix that. 35" tires seem to be the most popular bit that will require a lift kit with all the correct components to do it right (control arms, extended brake lines ect.) it all up to you and what you plan on doing with the jeep.

You can go up a little bit in tire size but you might need some spacers to make it work. As far as height goes,I'm pretty sure you can get 33s under it without much mods

You can fit 33's under it with doing nothing to your jeep. You can fit 35's with doing some trimming. If you want to wheel it with 35's I'd recommend adding bump stops. That's a minimum recommendation to basically make it look better for mostly on road use.
You can also fit 37's under it but you'll have to do a lot more cutting and more bump stops if you plan to wheel it. You wont have much travel though because of all the added bump stop to keep from eating 37's up on the sheet metal.
I'd go with 33's for better more aggressive looks and keep costs down unless you're planning to really start sinking money into your jeep modifying it.

I put a set of Duratrec LT 285/70R17's on my 2014 JK three weeks ago. I think they look great. They have almost 1,000 road miles on them along with a day of 'beginner' trails. So far, I haven't noticed any rubbing, even when crawling on the trail fairly aggressively. The tires really improved the vehicle's stance! My rig's next upgrade is the Teraflex leveling kit.

What to do with 4 (5) new tires?
If you upgrade your tires as soon as you buy the car you've got 5 perfectly good stock tires to sell, trade or store in a corner of your garage. What do you do with the stock tires? Sell them on Craig's List for 30% to 50% off?
