I'll be doing very minimal offroading. Mostly highway driving at 70mph (75 miles round trip to work and back).
I am considering going this route -- 2.5" BB w/33s or 35s.
Oh, the wrangler is a 2007 automatic w/the towing package so 4.10 gears.
What is everyone's opinions of that?

The 4.10s (I have, too) are okay with the 33s, BTW. I would not want 35s unless I regeared.

You said leveling kits would slide... so I can play...
Just got the Teraflex 2 inch leveling kit. I have 33 inch BFGoodrich ATs on 15 inch MB72 alloys from Discount Tire. No rubbing, no caliper grinding, perfect for my use. I might not even bother with a budget boost.
