285/75/R16 Soft 8 Question

Can I run Cooper Discovery s/t on a cragar soft 8 16x8 or do I need to go with 16x7?

I think you would be ok on a 16x8 rim.

I'm running the cousin of that tire in that same size on 8.5" wheels. It looks perfect. I think 8" wheels would be even better, but the 8.5s still give you plenty of sidewall outside the wheel lips.

A 16x7 will work as well
