I guess my question would be, at what lift height do you recommend using them?

We recommend using limit straps no matter what if you disconnect your sways. If you are planning on slowing upgrading your lift over time then it makes the most sense to wait till the end of your build before putting the limit straps on. This way you can accurately measure how long of a strap you actually need.

If you installed a complete kit like a Rock Krawler X Factor or any other kit that has all of the arms then you will want to measure for limit straps the second the kit is installed.

The limit strap is just cheap insurance to protect your shocks, brake lines, ABS wires, and drive shafts. If you never plan on flexing or allowing the axle to reach full droop then you don't need them.

I am ready for purchasing some limit straps and I want to know the best way to measure how long of a strap I will need. I understand for every 12" of strap it stretches approximately an extra 1". I guess what I am trying to figure out is how do I recreate my axle flexing short of removing one of my tires and allowing each side to droop to where I want to max out and determine the measurement. Does this method skew the measurement and should I fugure out a way to leave both tires on and flex the suspension out on some off camber hill or ramp? Any advice on this would be appreciated.

Would anyone recommend coil retainers in conjunction with limiting straps? Or is that overkill?

Definitely do the coil retainers. The limit strap will just save your shocks and drive shafts. If you have enough travel with your shocks you can still have a spring pop out. Why limit your travel based on the spring?
