Disabling ESP - Easy!
Read your onwers manual. It give's you the whole "nintendo code" thing in there to permanantly disable your ESP for modified JK's. I have an 08 and just tried it out a little while ago and it worked fine no problems.
Let me try here:
1. Turn Jeep ON (running motor)
2. engage 4HI
3. Drive straight ahead and note position of steering wheel whilst in a straight line (for compensation if needed)
4. stop, put in neutral (or park for Auto), engage E-Brake
5. Observe E-Brake light flashing on dash
6. quickly turn steering wheel to right 180 degrees until Jeep logo is upside down (do NOT let the wheel go back to the left in any way). I just yanked it and held it.
7. IMMEDIATELY hold ESP button and watch the brake light flash 9 times (or say "one beep, two beep, three beep... seven beep.") You will hear a chime at 5 seconds for ESPOFF but keep holding it until you finish your countdown
8. Immediately turn the wheel 360 degrees to the left (do not stop at center) and hold it there (logo upside down)
9. press ESP again as quickly as you can and hold it (there will probably be no chime, as mine didnt have one.) do your countdown - ESPOFF should still be showing on the dash
10. after countdown, immediately return wheel to center and press ESP and do the countdown again
11. turn the key off ASAP (I shifted into 2HI and noticed ESPOFF disappeared while the dummy light stayed on).
When turning the Jeep back on - you should see the dummy light (orange) on constantly and a short beep will happen with ESPOFF showing in the Odometer section for a few seconds.
I went and tried this and I was able to do it 2 times in a row and then struggled with it lol.
EDIT: Please do NOT turn the Jeep off while in 4HI. Once the ESP is successfully done, do NOT forget to put it back in 2HI before driving off!

I got it to go "ESP off" doing exactly as above. But there is no way I can get it to come back on! There is no reaction during any of the steps, no beeps etc....its like I'm not doing anything. FWIW, my parking brake light doesn't flash....its steady.
After you disable the ESP you can press the button and it won't do anything. I haven't tried to turn it back on yet. I may try that this weekend. I would think that following the steps would turn it back on.
Pressing the button will not do anything with the ESP once is is disabled. And in order to turn it back on, you just follow the same steps.
Someone mentioned a battery disconnect, but I am not sure about that?
