I am running 35x12.5x17 on my 2 door JK and getting 17 mpg commuting back and forth to work (15 miles each way, stop and go) I am also only running 30psi.

I'd give skinny tires a shot. For better mileage and they should get better penetration and less float in snowy or deep water street conditions. I'm not sure what the trail trade-off would be like, but my on/off road ratio definitely (unfortunately) favors street performance. I try to avoid deep mud which is where I feel like the wider tires would shine. I'm sure I could get through my handful of trail days per year just fine with a narrower tire.

I’m thinking skinny tires would do a hell of a lot better in the snow up here in Maine. I love the height of my 35s right now they just kind of suck in the snow. I may just end up with some 35x12.5s with better tread

ah... okay. That makes sense. I have hardly any experience in deep snow. Missouri get 6-8 inches (at most) at one time and that's even rarely. I'm in NC now and they panic with 1 inch.

I was just listing to High Sierra 4x4 podcast where they discussed the choices of airing down, airing up, tire chains, narrow tires for snow... you might take a listen to it.
