Just how high of a lift can you go on a unlimted before you start to run into issues with the driveshafts, or other problems?

You can run a 4" without having to swap out driveshafts.

It is my understanding that around 4" of lift is the "gray area" where drive shafts and compensation for suspension geometry may not be strictly necessary but starts becoming a good idea to do.

That said, with my 4" Teraflex lift I went ahead and did both drive shafts, adj front & rear trackbar and the draglink flip

I have a 3" OME lift and although both shafts seem to be OK, it looks to me like they are at enough of an angle that the cv joints at the TC are having to work a lot harder than when stock. This tells me to start looking for replacement shafts. Sooner, rather than later. I only have about 3000 miles since the lift and 5000 miles total. I will have new shafts before 10,000.

TF 3"

Front shaft boot ripped when wheeling
The front shaft angle at the transfer case was very steep and would have led to premature wear

I also know people that wheel with 2.5" lift and ripped there boots, although a ripped boot isnt the real problem if it stays greased. But the severe angle will affect something

Then you havnt wheeled it enough. As a daily driver the boot wont rip. Take a picture of your driveshaft angle and look at it compared to a stocker.
