Back when gas was less than $3/gallon, I'd probably have wanted the 5.7L gasoline engine... nowadays, I'd go with the 4.2L diesel anyday - the increased fuel economy, outstanding torque output, and nearly-guaranteed longevity are the selling points for me.

Diesel, definitely. The mileage advantage & the increased torque is definitely preferable in a Jeep, to my mind.
