Just curious if the benefit to having an air tank is just for air tools.

How much benefit can you get by having a 2 gallon tank for filling your tires as apposed to a tankless compressor?

It saves time. The first tire is aired up almost completely by the tank. While your checking tire pressure and moving to the next tire, the compressor is pressurizing the tank.

You can pop your tire back on if you lose the bead if necessary.

Also, a full duty setup, like you might find with a 2 gallon tank, can come in handy for helping your buddies air up before the trip home.
