offset would depend on the wheel width, but backspacing would stay the same.
i would guess 4" of backspacing.
this would be 0 offset on a 8" rim or -2"(-10mm) offset on a 10" rim
i doubt you will find a 20" rim with that amount of negative offset. most i would think have a positive offset (bling-bling hummer or expedition wheels)

i dont know this is my first time having a jeep before this i only had luxury, or sports cars so im not used to buying rims for off roading i used to buy for looks you know with low pro wheels and my buddy has 20's on his dodge 2500 with a six inch lift and 37 and they look really nice but i guess since ill be rock krawling and mudding the smaller wheels would be better at least thats what everyone tells me

Plus, the costs tend to be cheaper overall with tires with big sidewalls.
I'd say read up some more, figure out how agressive you are going to be offroad. There has been a small number of Jeeps that actually pulled the 20"s off (a few were at SEMA) and they looked good but the guys on here are correct, you will get better off-road performance with a smaller size.
