I am doing a ton of mods this week, can I DRIVE my JK with this set up temporarily? According to some notes, it appears there may be some rubbing when I turn etc..

Not sure if it completely answers your question, but I ran 34's (295/75/16's) for a two days around town prior to installing my OME with no lift. I had no rubbing, but I was also running aftermarket rims.

With proper backspacing and 2" of lift I'd think you'd be fine.

What hiteck said, you'll be fine so long as you are running after market wheels with less back spacing or wheel spacers. Without them, the 12.50 width will cause your rear side walls to rub on your sway bar links and you will have rubbing at a full turn.
