Default Getting hot oil warning

Hi everyone I'm new to the Jeep world I purchased my Jeep back in March. I had a run of issues with it this past week. I replaced a lot of stuff due to it getting rather warm. I have replaced the thermostat and the fan assembly. It no longer runs warm my water temp stays around 206 or cooler. If im in traffic it'll spike to 210 but cool back down to 206 or less. Now my issue is I'm getting a hot oil warning and trans temp is around 180 to 186. Before it would run in the 170s. My Jeep does have the o.e. trans cooler. I have changed the motor oil it didn't seem burnt I run mobil 1 full synthetic. The trans fluid doesn't smell burnt to me either. I have noticed that sometimes it'll be 186 then drastically cool down like 20 degrees as if there's a thermostat in the transmission if that makes since. It always heats back up to the 180s after a few minutes of driving. I have a large wheeling trip planned but am currently scared to take it due to the warning I've been getting. Any help would be greatly appreciated. Thanks in advance
