I'm pretty sure the hill assist on the standards only stops you from rolling back. I coast down hills here all the time and never have had the issue.
My guess would be something in the stability management, or abs system.

Hi guys, I am not glad to hear it has happened to other but also I am because I know I am not crazy now! I took it into the dealer Monday and of course they said I am crazy its a manual it cant down shift and of course they cant make it happen to them so there isnt a problem. I am a little worried for when winter time comes and the wife and little man head up to the cabin. I might have to give them my F350 instead of the jeep. I am going to try and head up to the hill it happens on in the next few weeks and try to see if it will happen again. I have a gopro so I am going to set it up and see what it will catch. I honestly think there is nothing more frustrating then knowing something is going on and having a dealer tell you there is no problems. There was no codes present and everything seemed to be fine on their end. They said its a brand new vehicle so there shouldn't be problems.
