TPMS yes or no
I just bought a set of tire and wheels to use only when I am out wheeling. The question is, what are the down sides of not installing the sensors?

I don't see a down side. Get an AEV Procal and set it to 0 and you'll never get the light. I think that tpms and computers attempting to tell us when to do maintenance is either government and/or manufacturers attempting to "dumb down" vehicle maintenance. Unfortunately, I know some individuals who are lucky they can put gas in never mind checking the air pressure in their tires or changing oil as part of routine maintenance.
TPMS seems to cause more problems than they solve... if you have the procal and turn the sensor off I would do that. If you go wheeling alot you are always checking your tire and tire pressure anyway, and if you have a flat you don't really need the dash to tell you that.
TPMS's have gotten better but I remember when they first started putting them on sports cars they would go crazy when you started taking fast turns... I have seen TPMS go off in corvettes, 350z, cayanes etc all when the driver was taking an aggresive turn. Each time I saw this happend we got out of the car and checked the tires and they were fine.

Only thing I'd add is I've seen the stems which are aluminum on the TPMS get destroyed on the trail...go with rubber stems and a programmer like everyone has stated above and set the TPMS to zero. just my

Unless you are mounting your own tires or have a friend do it, most big shops wont mount tires without the TPMS sensors installed. Ditto on the rubber stems vs aluminum. Corrosion on aluminum stems over time and risk of snapping one or more off is real
