Why would i want to turn off the ESC?

I think it interferes with certain kinds of wheeling.

Unless I'm mistaken, it's not 'completely' disabled when you simply hit the ESC button.

You mean pushing that little button? I found out why several years ago, the first time I went to play in the sand in high gear and the Jeep did not want to move.
