Thanks everyone for the recommendations- we eventually had a great time on the dunes, but the rain had flooded the creek badly which delayed our trip. The Honeymoon cafe is FANTASTIC, and on Christmas Eve we went to Thai Dehvah (about the only place open!) after a long day on the dunes, there is nothing quite like a bowl of Tom Yum to warm you up!

The SunBuggies guys were all really nice and doing about the best they could, but were really plagued with equipment problems- it made for an interesting trip along with the flooding/beach closures. I would definitely do it again!
