Sorry, that was a quick pic from my Facebook, I was too eager to tear into that beef to take my time, but yes, it was great, I am ready to move from Osage Orange to some oak or Mesquite . Happy Smoking to all.

I break the bird up to make it work better in the BBQ
- The legs get boned, stuffed and rollled then cook for 3 hours
- The breasts are then roasted on the bone for 60-90mins so they don't dry out

I've got to give smoking it a go...

Packing up the the wife and kids this weekend and taking the Jeep to Phoenix to see her sister. I think we will throw some Colosimo's Tuscan brats in the cooler to take with and go grill them up in the warm AZ sun.

Look what I picked up last night. The processer finished my deer that I shot during Thanksgiving!
  • Hot Links!
  • Hot Links w/ Jalapenos!
  • Tenderloin Steaks!
  • 1/4 cut back-strap (for deer rolls)!
  • Jerky for the boys!

I already have a couple packages thawing for this evening! My wife is already going nuts because it is supposed to be in teens tonight! Oh well! Fire up the grille and grab a beer!
