You're both correct!!! It's a very efficient smoker that's easy to build, and pretty darn cheap too. Unfortunately they're also pretty ugly on the porch, hence the name.

I've cooked on it 2 times, I'm still trying to figure it out. It cooks faster than my offset did. Practice, practice, practice!

I see your temperature probe is about 3" long like mine. I have found it to be about 25 degrees hotter in the center of the drum, than it is closer to the side where the probe is. So if your shooting for 250 degrees, try to get the guage to read 225 degrees. It took me a few tries to get it right, but now I can predict it's every move.

I finally put an oven thermometer on the grates, mine was closer to 40 degrees off, I may try putting a pizza pan on my basket for a diffuser, I really like the length of time it will hold temps, I just need to figure that baby out.

Thats an interesting idea with the pizza pan. Let me know how it effects your temps.

Ok, tried an airflow pizza pan today. Just sat it on top of my charcoal basket, worked awesome. Much more even temps across the grate. I suggest giving it a try.
