Pastrami

Ok, started with a brisket, cured that into corned beef, then made pastrami, turned out tasty

I should have taken pictures of the process, turned out almost half in size shrinkage from the process

Now I am hungry. Good corned beef is almost impossible to find in North America. Go to England or New Zealand and try some and you will know what I am talking about.

Would like to go there, besides what I have made, all I’ve eaten was the store bought premade in the vacuum packed bags in the meat section, I’m a little biased, but I like mine better, but somebody that really knows how to make it would be a treat

There's something about doing it yourself that makes it taste so much better (and obviously fresher). I've started making sourdough- a far less involved (and less expensive process) than what you've got going on. It does make me want a good sandwich about now though.

That looks amazing. Now make some chili cheese fries with it and you'll really get my mouth watering.

Looks to die for!

There's a bar near me that makes some of the best roast beef sandwiches I've ever had. In the middle of the bar they have a counter with giant slabs of beef chilling in a vat of gravy and someone slicing off pieces as needed, and they grate their own horseradish in-house, no unnecessary additives or anything, just ground up roots that burn a hole through your sinuses into your brain..
