The only caveat I'd give for that is ... be careful if there's a lot of snow on the trail, especially if you have all-terrain tires!
I was there up there last Friday with two friends, and there was (I'd guess) 2-3" of snow on the trail at the bottom, and more like 6-8" on the trail at the top.
All of us were running aired-down mud-terrain tires -- 35s for me, 33's for them.
First guy in the group (XJ) was hitting fresh powder and had little problems. Second person struggled sometimes, and in the process ended up packing down the trail to where it was next to impossible for me to get decent traction sometimes, even with lockers on. On some of the steep areas, I'd get towards the top, lose traction, and start slowly sliding backwards (which is not a good feeling on the narrow parts of the trail). No way in hell I'd ever attempt that with stock AT tires!!!
Any other time, Shoe Creek's a great run for stock Jeeps.
Don't know if this link will work, but it shows the JK in the middle trying to get up the area by the old "posing rock". Took her about 3 tries like that to get over. This was the fun part of the trip. Seeing her do that when the trail was only 10 feet wide and a huge drop-off to the right was a little freaky.

I would be up for the trip. That was my first time having the JK off road and Shoe Creek seemed perfect for popping the cherry. I would say a stock JK would have no issues (without snow). The trail is pretty basic with any challenges having a bypass or being off to the side. I think I could have ran most of it without the 4 wheel in, which i did for awhile then thought i better not press my luck.
Aristobrat- Good photos. Like the pics of the dog's set up. My Jack i think was a little scared for her first trip bouncing around, but still think she had fun.
