Undercoating? general care?
According to the dealer you should probably get undercoating every other year.
What are your opinions on it? Due to the salt used on the roads here would you go yearly? Skip it altogether (some people think it's a crock)?
I can't say I've done much with my previous vehicles in the way of general care - an overdue oil change, a backyard tuneup... but then again, my previous vehicles came with a $1000 price tag. Given this climate, what are some things you do to keep your Jeep running and looking great? (I already need to touch up the paint on my hinges).

Those hinges were taken off and painted by the dealer once already

Undercoat every year and wipe all seals down like Mike said. Have a look under the hide a trunk area beneath the jack.... sometimes water and crap can freeze in there and start rusting shit. Regular and routine maint dude and you should be fine... just don't let it get ahead of you and pile up.

You can buy good diy products but it'll land overspay all over you and your driveway if you don't have a lift and it only saves you like 10$. Not worth it IMO
Dealerships do offer it on initial purchase (at least here they do) but their prices are a bit high as you can imagine.
Detail shops and anyone advertising this undercoating will do it. Like Mike said it's a greasy/waxy film or coating that covers pretty much well every nook and cranny under your Jeep. Frame, body seams, inside the doors..... anywhere salty water can get in and start to collect and form rust..... definitely worth the venture on a yearly basis.... well up here in New Brunswick anyway where they're already started spreading salt from last weeks snow storm! Winter started too early this year

A rust-preventive "creepy coating" that penetrates seams,& is applied on a yearly basis is-dare I say for fear of erasure-"Rust Cop" .Upstate Ny is terrible for salt,& Rust Cop is used by fleet operators .It has an excellent warrenty as well...
