We ate a roll of summer sausage from my (archery season) doe this weekend.
Venison sausage with jalapeno peppers and cheddar cheese. Mmmmmm.
The buck will be made into 6 lbs of jerky, 10 more lbs of summer sausage, and the balance as deer burger. I have to sneak the deer burger into dishes outside of food for my blood relatives. They loved my chili at a church Super Bowl cookoff.......until they found out the meat was venison. My wife's family loved my meatloaf.......until they found out part of the meat was venison.
