Is there any problems with fitting a 35" tire on a stock 18" rim that I've been told is only 7" wide by the tire dealer in town. He says I need 9" wide rims ? Do I really ?

No problems, that's only for liability reasons since it's a smaller width than what's recommended. You may have to check out a few shops.

Actually it's 7.5" wide and the only issue is to make sure you have the right amount of air pressure in the tires so that they have a flat contact patch with the road, and wear good. Do a chalk test to get it right.

about what pressure is everyone running with the 35"s on the 17" moabs? I haven't done the chalk test yet.

This will depend on the tire...I run 35x12.5 R17 Cooper Discoverer STTs (10 ply) at 34-35psi.
