Crash, do you have the seats at your home? I would take them to the nearest manual carwash (or if you have a pressure washer at home) and just blast the crap out of them. The fabric should be stout enough to withstand a mild pressure wash.

Go buy yourself a couple of jugs of Spray-n-Wash or like products and soak the seats down good. Let it sit, but not dry, and try the pressure wash again. If the covers come off you could soak them for a day or so in a large tub and take them to a laundromat.

Beyond that covering may be your last option to cover up the stains.

Take them apart and wash them seperatly. Get all the mud out of the foam, get a hard bristle brush and go to town, Cinderella style, on them with oxy-clean! just tell them Billy sent ya!

Duplicolor vinyl and fabric coating would work best.

Like the man said, Duplicolor Vinyl and Cloth paint. Here's a pair of seats out of my TJ. I taped off the left one and sprayed black. Looks like new.
