I have rusting brackets as well. Bad/ no paint in those areas.

As for the dew, it sounds like you have a leak. If you have a four door I suspect the seal at the pillar between doors is leaking. That's the main point of water intrusion in my jeep. It's still odd to get dew over all of your surfaces with closed windows. You could certainly have enough water lurking in your carpet to support that much condensate ,but you would really have to get the jeep pretty warm to get enough water vapor in cabin to coat all the cool hard surfaces.

X2 on that... This happened to me once (though not as bad as your sounds). After 2-3 days of constant rain etc... all the water that was in the Jeep evaporated and fogged everything up from the inside when the sun finally came out. It really wasn't nearly as bad as yours sounds but it is similar. I just left my windows cracked for the day (in the sun) and all was good again.

X3. My old Camry used to fog up like a mutha, and it was due to wet carpets. Nothin like scraping ice off the INSIDE of the windows and windshield on a cold morning.

Everyone thought I was the friendliest guy in Massachusetts when I was driving around though. They thought I was waving, but I was really wiping all the fog off my windows so I could see.

Don't miss that car too much.
