Default Hot Oil Warning?

I'm confused I have ran my jeep from el paso tx to San Bernardino all day drive, once arrived to cali went rock crawling out by bass lake (same day) finished the night at the lake warning sign never came on. I've taken the jeep out 2/3 times a week mid day and went on a 7hr run last week and nothing then saturday at 2am drove the jeep 10 miles out with some other friends and started some trails within 20-30 minutes my hot oil warning came on and the jeep is hyperventilating whats going on?? i did check my oil and i was normal, so i ask why this might have happened with such short driving and 42 degrees out

Is it an auto or man take a look at off roading 1on1 this may help but to sum it up was the o/d off it may be your transfer case got to hot

its an auto, and the o/d was on. but to get hot in such a short distance? thats what i found to be so odd
