Oklahoma 0 Mirrors with doors off?
EDIT: More directly. You only need one side mirror in addition to your rear view.
Actually, the law reads in Oklahoma that you must have the drivers side mirror, and then you must have either the passenger mirror or rear view mirror. So with your doors off getting a mirror for your drivers side is sufficient to stay legal.

A. Every motor vehicle shall be equipped with a mirror mounted on the left side of the vehicle and so positioned and located as to reflect to the driver a view of the highway to the rear of the motor vehicle.
