Yeah - the SHAPE of the brake side of the rim is different for different rims...even from the same company...so you have to use what someone else tried and found to work...or test fit at the shop...etc.
The less BS you use, of course, the further away from the calipers you are moving the rim, increasing the odds of clearance.
The stock BS is at 6.25"...a lot of BS to tuck the tire tight into the well.
Just to run std 12.5" section width tires, a BS of ~ 4.75" or so is required.
If running 15" rims, 4" of BS is typically enough to clear the brakes, but may put the tires outside of the fenders, a potential stuffage issue, and in some states, not allowed by law, etc.

I just put on some 15x8 Crager soft 8's this weekend, I had to grind down a bit on the caliper and a touch on the rim to get them to clear but they are on now. The very inside of the 8 holes are what touch the caliper, some cleared and some rubbed so I basically evened them out and ground a small groove in the face of the caliper, I probably have a 1/16 inch of clearance now.
