Which 2.5 Coils to get?
I had the Pro-Comp 2.5 inch coils and did not like them and ended up going with the EVO 3 inch plush ride coils and really like them. Additionally since you are going taller than stock I would highly recommend getting an adjustable front track bar or raised front track bar bracket. Since you mentioned some monster pot holes I would also suggest installing inner C gussets as they can bend with 35's when you hit pot holes.
One last thought, if you can find a local Jeep club where there are Jeepers who have the coils you are interested in I would ask for a ride. Ride is 100% subjective and what works for some may not work for you.

So your saying I should do the rear track bar bracket no matter if I keep the stock track bar or get an aftermarket track bar.

An adj trackbar would obviously do a better job of perfectly centering the axle, but, the bracket has the added benefit of helping with the roll center. Personal opinion on whether you would care about it, or how you might feel knowing that one tire might stick out .25" or whatever more than the other side.

Is the RK rear track bracket AN AXLE side bracket. Does that just mean it connects to axle vs the chassis side mount of track bar in rear?

That gets in to keeping the draglink and trackbar parallel, and flips/drop pitmans, and lift height, and bumpstop to keep the bracket off the frame. With 2.5" coils, he would be better off just using the adjustable trackbar that comes in the kit, and not even thinking about this.
Some mfg's choose raised, others go with dropped. Most posts you will see indicate that raised is the better option,

I hear pros and cons to different parts of kits, so if I can try to mix and match to get get a quality setup I'd rather spend the extra time and money to do that.

Very happy with my AEV 2.5" dual sport plus GEO brackets. On road DD was a big improvement over stock.

Just go with the stock mod and add lcas if you want. No sense in piecing out the stuff that comes in RKs kit from another manufacturer. There's not really any differences in each of them. Simple, RK 2.5" coils, front track bar, rear track bar bracket, front disconnects, rear adjustable sway bar, and if you want, front lower control arms. Then add some 9000s and you're good to go. It's simple.
