When I started my stretch I just reused my buddy's old coil mounts and plug welded them to a plate with a hole drilled in it and mounted them over the body mounts. I'm going with outboard coilovers though so not using this setup anymore. Was a decent idea though...

much easier approach that way. i did a small stretch and coils and am now redoing it after a few months of it. with coils it can be a pain to keep the lift low and also run long travel shocks properly. you can retain them and stretch the crap out of them if you want though...also if you ever decided to go coilover its alot to cut off and redo, but you may be able to reuse some of the stuff. cost is the main reason to go that route, but if you have the money personally id go coilover. that being said plenty of people do run the coils/shock setups no problem.

not a jk but hes on coils/shock stretching the crap out of them.

How much of a stretch are you looking to gain over stock? Our stretch kits use a coil and a shock in the rear and they work well. You can get away with doing this just fine, the only issue you may see when trying to keep your rig at the 2.5" lift height is the fact that you will most likely need to bump stop it to limit the up travel more then in a little higher of a kit.
