WHAT GEARING SHOULD I HAVE FOR ?

Are you running 4.10s now?
I think that 4.10s are going to be your best option. I have a set of 4.56 test gears and as far as I know they are the only set ever made. They are perfect with 33's and a stick. I think that any higher and the gears would be too much, especially with an auto.

I have an 07 unlimited with the 4.10's and 33's and find it not to be that bad. It doesn't seem to like OD too much if there are many hills on the interstate. I am wondering if just getting the accupro to set the shift points to match the tires would be enough to solve my annoyances?
Gear swaps are pretty expensive, you may want to look into a programmer first and see if changing the shift points would make you more happy.
