Changing spacers to coils
I currently have a rough country 2.5 spacer lift on my 07 two door (installed in 07 yikes!). I'd like to change the spacers to coils and only make that change. Is that an easy, smart swap? I have bilsteins installed that only have about 20k miles or less. Should I do 2.5 springs? Can I do 3 inch springs? Would change out the whole lift , but she's getting up in miles.
It's probably mostly about ride quality, I believe new springs vs. the original ones with spacers will ride better (please correct me if I'm wrong). If I could go up to 3" lift coils I'd like to, to give me some more space and ride height. I wheel some, but mostly use the jeep to access trail heads.
I added the shocks later, to replace the rough country ones that came with the kit. They're the 5100 bilsteins , think for a 2-4 inch lift so i thought they would be good even if I switched to 3" coils. So could I keep all the other components and just take out the stock coils and spacers and replace with new lifted coils ?

should be good to go... but it really is more involved now that you are lifting higher. Look at some of the 3" lift packages like AEV or Teraflex... that will give you an idea what is involved to do a proper lift. Just putting coils "may" be more comfortable ... but may not be as driver friendly since the suspension geometry has changed.

If it were me, i'd use 2" coils, not 2.5. You're going to get over 2" of lift out of a 2" coil (I did), and you won't have the worry of drive line issues. If you want to go to a 2.5" or 3" kit, you're going to need drop brackets, longer brake lines up front, and other goodies to do it right.
