If all else was capable, extended brake lines, longer shocks, etc, does more coils in a spring mean you can potentially get more droop?

X2 !!
he's a genius

If you've ever noticed the springs are usually loose to move around during full droop so they don't play a rold in the flex factor. i would say control arms will be the next limiting factor if you already have longer shocks

I thought the spring was at risk of coming unseated after a certain amoun of droop which was bad and was looking into spring clips that would prevent his from happening. So it's good to let that bad boy just bounce around at maximum droop?

i would get the clips to keep the bottom of the spring seated at the axle end, the top will just unseat from the top and use the bumpstop as a guide to seat the spring back, if the bottom doesn't have the clip and spring unseats from the axle end, spring falls out and well makes for a bad day.

Springs are there to bear the weight of the vehicle. Number of coils in a spring gives you what is called progressive movement. Progressive rated springs have better control for different types of terrain. But the spring only carries the vehicle.

Shocks control that weight in movement.

Shock length limits your jeeps ability to droop or stuff your tires.

If the shock is completely compressed it bottoms out (unless you ahve bumpstops) and this is all the furthur you can move that tire.

If the shock is completely drooped the shock piston will eventually reach its limit. The that is the lowest that tire will reach.

That being said you must not have any other limiting factors such as brake lines, sway bars or other components getting in the way of flex.

Ohh... TEEJ will tell you the same thing but it will take a week to read.
