I'll do a rough calculation that with 5.13's turning 35's at 2,500 rpm, that you are averaging roughly ~ 64.5 - 65 mph...a reasonable cruise speed for the NY - Princeton Commute.
You are carrying a lifted armored rig on those 35's...so if a stock JK could get about 18 mpg under those conditions...then you should be closer to 15 mpg in steady traffic, and somewhat less per gallon if its stop/go...but then you would not be at 2,500 rpm cruising along either.

If you were to drop to about 45 mph, your mpg would probably soar to more like 22 mpg, as the wind resistance would be cut significantly.

Of course, at 100 miles each way, that would add ~ 40 minutes each way to your commute.
At ~ 15 mpg, 200 miles for the day = ~ 13.3 gal, at $4/gal = $53.33 per day in gas.
At 22 mpg, that's 9.1 gallons per day = ~ $ 36.36 per day in gas....saving $16.97 per day in gas.
So you pay the difference to get 40 minutes more sleep, and to get home 40 minutes earlier.

Seems reasonable.
