Are the rancho's fairly easy to adjust?

Just turn the knob, I love mine.

Fronts are easier than the rears but still only takes 5 minutes with a creeper.

As mentioned fairly easy.
One thing that some do is turn/spin the rears around 180 so that the shock body protects the knob.

^^yep. I would add...hit the body with some clear coat.

Jumping back into this. As mentioned before, I'm going with the Rancho RS90000XL adjustable shocks. I currently have a TF leveling kit and was going to move up to a 2.5 inch lift. Looking at my next set of tires, I may stay with the leveling kit. Can I still get away with the 29/30 shocks in case I move up in the future (only a 1 inch difference) or do I need to move down a size?

I would go with the 31/32s. Better to have more than not enough. Especially the travel lengths of you wheel.

Make sure to have correct bump stops if you go with this length.
