Springs
I run Fox and couldn't compare to Bilstein since I've never experienced them but I'm happy with my Fox. They aren't softer then stock but that's not what I was after. I see these posts where people say their lift is softer then stock but with 5" of lift, I wouldn't expect anything close to stock.
IMO, you can't go wrong with either.

Check out Ranchos. Rancho Suspension: Shocks » RS9000XL™ . They have 10 settings to allow you to pick how stiff they ride. I ordered them for my Jeep, have not installed yet. My coils will be the TF leveling kit coils.
Talk to off-road elements, they gave me a good deal. ( View Profile: Offroad_Elements - JK-Forum.com - The Ultimate Jeep JK Wrangler Bulletin Board )
Ranchos have just as good reviews as Bilsteins do on the forums, from what I've seen.

I put the Rancho rs9000xl's on about a month ago and I am really happy with them. I like being able to adjust them and the price was good too. Amazon actually had them for a great price. I am running them with evo plushride 3" springs.
