Just get some used wheel spacers so you can keep it from rubbing and run a 35x112.50 17 on a 7" wheel. People with try to throw a lot of negatives at this but I remember back in the old Jeep days most all of us guys used our stock 15x7 wheels with a 33x12.50 tire. Never had any problems at all

I am pretty sure you will need the spacers to keep from rubbing. 4.5" backspacing is minimum if I am not mistaken.

Definitely need the spacers to keep from rubbing when turning and just rubbing in general. Find you a used cheap pair since it's going to be winter only

I think stock wheel is 6" back space so 1.5" spacer will give you 4.5" backspace which should work well.

I was thinking about keeping my stock wheels and putting a more aggressive tire on them too

I didnt go as big as most do but I put 265/75/16 on my stock wheels, and love it! I dont understand what everyone has against stock wheels, unless its a tire width issue I guess
