Default Torn CV

2.5" Teraflex coils with .75" spacer up front with stock arms and the cv boot on my driveshaft is torn and flinging grease after about 10,000 miles on the lift

Based on my research I thought I'd be ok since I've been wheeling at full droop a few times and have no clearance issues with my exhaust or crossmember.

Is there any chance that this is just a routine maintenance thing that I just need to repack a new boot since it's operating at a different angle? Or do I need a new driveshaft for sure?

sorry, your shaft needs to be replaced. the TF coils tend to offer more height than is advertised and at 3" or so, your cv boots would be in a constant state of pinch and that is aggravated when wheeling. over time, this will cause the cv boot to fail. the rzeppa joint is not serviceable and if the boot has been compromised, it's just a matter of time before the bearings inside fail.
