Yes, torque is key. However, it's more horsepower that gets the work done at a faster rate.
You can gear a bicycle down (increase torque) to where you can pull a box car, but progress will be very slow.
It takes more horsepower (the locomotive) to do it at an acceptable speed.

As for your second point you will find many different opinions and support for each side just by doing a simple internet search.
My second point isn't opinion. It's just how it is. There is no horsepower without the time factor in the equation. It takes more horsepower to move an object against a resistance at at a faster rate. (Torque would have to increase, but you can't say "it is torque, not HP that is needed", as your engineer said. They are both related.

If the Jeep's engine isn't allowed to turn fast enough, it won't produce enough horsepower to move the Jeep efficiently.

In fact, looking at most dyno sheets, torque drops off as horsepower continues to climb, simply by turning the engine faster, allowing it to perform more work in a given time.

I am keenly aware of what torque and horsepower are. I've raced both small and big block engines for the better part of thirty years. I don't need to ask a rocket surgeon about this stuff as I'm confident in my knowledge, it's application and the results. Taking pictures driving around at 50mph and 1500 rpms won't change my mind either. It's simply not a target velocity for most people, but hey, I'm glad it works for you.

Have I told you guys I love you lately?

Seriously you guys are making me smile!

Aaanyway.... I have a 2012 Rubicon Unlimited with an automatic on order. I buying 37s and don't want to change the gears out right at first. I'm thinking I should be ok with the Penistar and the 5spd auto and 4:10s at least until I get a chance to swap gears.

Am I foggy brained for thinking this?

Your one of those. Show me a "car" that you can rock crawl in. Mpg is a factor. 16 mpg is much better than 11. Gears do wonders for mpg with bigger tires.

I think you'll be good, it's on the cusp and I'd drive it as is for a while to see where you'd really like to end up with a gear swap. Also, depending on actual size of your 37s, could be just perfect for you.

Those were my thoughts also. Especially since I won't be doing any serious Jeepin for awhile.

Also been reading up on tires. I've always had one type or another of Swampers which I LOVE but don't want that much aggression in a tread. Any thoughts? Note; daily driver.
