Not to hijack this thread...but I've been wondering the exact same thing and I'm curious about a follow up question. How different in size are the BFGs in this configuration as compared to the stock SRAs (or BFG MTs)?

The first number is the width of the tire in MM, and the second number is the aspect ratio (sidewall height) - which is the percentage of the width. To get converted into inches, just divide by 25.4 (that is how many MM there are in one inch).
So, a 255/75/17 should be right around 32x10 (255 divided by 25.4 is basically 10" , which is the width - 75% of 10" is 7.5", which is the sidewall hieght - 7.5" x 2 is 15" of total sidewall - plus the 17" rim equals a total hieght of 32". Confusing yet?
Soooo, a 255/75/17 is 32x10, and a 285/70/17 is 32.7x11.2 - within reason.

The only part I don't get is how a 10" wide tire and an 11.2" wide tire fit on the same width stock rim. I guess the bead is in the same spot, but the profile flares out further at the treads?

Here is my Jeep with Stock 17" wheels and 285/70/17 BFG A/T KO tires.
Granted, I do have Rough Country's 1.5" spacers. Had them since i had the stock SRA tires on it.
You do not need a tire carrier for this small of a tire.
