We've always winched to another Jeep and let them put a slight parking brake pull on it and just kept it taught enough to wind it up on the spool evenly and tight.

I unwound it all the way then using a tree saver hooked up to a good size tree that was slightly uphill and used the weight of the Jeep to keep the line tight while I spooled it in.

My 4 wheelin spot has a long gentile hill towards the lake. I usually get a kid to sit on the 4 wheeler (ATV) at the bottom and have him/her steer the atv towards the jeep as I spool up the line.
That way If I screw up and dont get my wraps in order, I can have them back up or hold the brake as needed until I get it lined up again. Its kind of theraputic for me.

And dont forget to use thick leather gloves....EVER.
